Seaweed contains a high proportion of protein, iodine and various vitamins. It also contains very few calories. It is often called Welsh man's caviar!
Seaweed is most commonly recognised in its cooked form as laverbread, but this cookbook is packed with a range of wonderful recipes and the techniques on how to make them, there are also notes on the use of seaweed in modern cooking, such as how well seaweed accompanies Welsh lamb. A metric and imperial measures conversion chart is included at the back of the book.
